Bozner Bier
You raise the glass, and the first thing you notice is the colour. Bozner Bier shimmers; it’s robust, not smooth and polished. Then the aroma: malt, a hint of hop blossom, the scent of bread. And finally, the first sip: full-bodied, smooth, with a freshness that reveals this beer was recently still wort. Light in alcohol content, with a long finish.

What makes this beer unique? The Bolzano yeast
It is cultivated right here at the Obstplatz square. Nowhere else in the world. This yeast is officially registered and is the reason why Bolzano Bier tastes like it does. Every batch has been fermented with it for years, with the same unmistakable result. Two beers with identical ingredients would taste different elsewhere. Not here. That‘s Bozner Bier.

How Bozner Bier is made

crushed malt and warm water come together, allowing enzymes to convert starch into sugar. Careful temperature control at this stage determines the beer’s body and mouthfeel. After lautering, the wort is transferred to the brewing kettle.

Hallertau varieties bring floral elegance, while Spalt hops add spicy accents. Boiling extracts bitterness and flavour, and the timing of each hop addition shapes the balance in the glass.

The brewery’s best-kept asset: Cultivated in-house over many years, it gives Bozner Bier its distinctive character and unmistakable flavour profile. This is followed by maturation: Several weeks of rest during which the beer clarifies naturally and binds its own carbon dioxide.
Where to buy Bozner Bier
Helles lager and Weizen wheat beer are also available in bottles to take away, directly from the restaurant. Our master brewer’s tip: store in a cool place and enjoy soon – Bozner Bier tastes best fresh and unpasteurised.
Craft beer from South Tyrol with a Bavarian soul
The brewing tradition behind Bozner Bier is rooted in the Bavarian school, a philosophy that places balance and drinkability above all else. For us, craft beer from South Tyrol means respecting this heritage while reinterpreting it with Alpine ingredients. Mountain water, regional sourcing, and our proprietary yeast – together, they give Bozner Bier its unique character.
